Recipe – Mountain Gomae

 

Mountain Trek’s Mountain Gomae is one of the veggie side dishes that our guests just love!

Gomae, or Sesame in Japanese, is the perfect accompaniment to the trio of lightly steamed spinach, swiss chard and broccoli. We have revved up the flavours by adding tahini and sesame oil to the accompanying sauce and topped it with toasted sesame seeds as well as green onions.  We pair it with our Wasabi encrusted Pacific Halibut for a superb Asian inspired meal! 

 

 

Recipe – Mountain Gomae

Ingredients
  • ½ of 454 gram box fresh spinach
  • 4 c. Swiss chard – sliced long and narrow
  • 3 c. broccoli florettes
  • 2 Tbs. green onions cut diagonally
  • 3 Tbs. sesame seeds – lightly toasted with a bit of Braggs
  • Dressing:
  • 1 ¼ Tbs. tamari
  • 1 Tbs. sesame oil
  • 2 Tbs. essential oil (3*6*9*)
  • 1 ¼ Tbs. tahini
  • 1¼ Tbs. rice vinegar
  • 1 tsp. agave
  • ½ Tbs. water

Instructions
  1. Blend dressing ingredients together.
  2. Mix spinach and chard together and lightly cook. Drain well. Steam broccoli and mix with spinach and chard.  Drain well. Garnish with green onions and sesame seeds. Serve warm with dressing on the side.
  3. Portions:
  4. Women – 1 c.  mixed green vegetables and
  5. ½ Tbs. Dressing
  6. Men – 1 ½ c. mixed green vegetables and
  7. Tbs. dressing
