Moroccan Turkey Stew

This stew is hearty, warming, packed full of nutrients, and brimming with flavors that will transport you directly to Morocco.

Tip: take the spices (including the ginger) aside and saute them in a near dry skillet on a low heat for a few minutes. This helps release their rich flavors. Then add your onions, celery, etc and saute them all together. This dish can also be left to cook in a slow cooker rather than simmering on the stove.

INGREDIENTS (Serves 4)

  • 2 Tbsp. olive oil
  • 16-20 oz turkey breast
  • 1 1/2 C. onions, diced
  • 1 1/2 C. celery, diced
  • 1 1/2 C. carrots, diced
  • 1 1/2 C. yams, diced
  • 1 1/2 C. zucchini, diced
  • 1/2 Tbsp. cilantro, minced
  • 1/2 Tbsp. fresh parsley, chopped
  • 1 Tbs. fresh ginger, peeled (about 1″ piece)
  • 1 tsp. turmeric
  • 1/2 tsp. sea salt
  • 1 tsp. garlic powder
  • 2 cloves fresh garlic
  • 1 Tbsp. fresh lemon juice
  • 2 Tbsp. currants – washed
  • 5 C. veggie or chicken stock

PREPARATION

  1. Preheat oven to 375.
  2. Rub your turkey breast in olive oil and bake until cooked through (internal temp of 165 F). Meanwhile,
  3. Sauté onions, celery, carrot, yams, ginger, until softened.
  4. Add stock, turmeric, and salt.
  5. Simmer until tender.
  6. Add parsley, cilantro, zucchini, currants and lemon juice.
  7. Enjoy!

Sherry Stuffed Chicken Breasts

Make a little gravy from the leftover mushroom stuffing. Add 2 c. chicken stock to remainder of mushroom stuffing, add salt & pepper to taste. Cook for 3 minutes – strain juice off and thicken with 1 tsp of arrowroot mixed with water.
4 – ½” rounds of yam – baked

Steam:
16 Brussel sprouts
12 New carrots
20 Pearl onions
Sprigs of fresh thyme

Portions:
Women – 4 oz. Chicken, 4 brussel sprouts, 3 new carrots, 5 pearl onions, ½” round of yam
Cranberry salsa – 1 Tbs. per serving & Gravy – 1 Tbs. per serving

Men – 5 oz. Chicken, 4 brussel sprouts, 3 new carrots, 5 pearl onions, ½” round of yam
Cranberry salsa – 1 Tbs. per serving & Gravy – 1 Tbs. per serving

I’ve always thought that frittata sounded like a sexy latin dance. At any rate, its a delicious way to dazzle your friends and family with a breakfast favorite that is simple to prepare and divine to eat.

Notes:

  • Recipe serves 3 x 8 oz each, or 4 x 6 oz (at MT we serve women 4oz, men 6oz – for weightloss)
  • Hemp protein powder, we use the pure stuff here at MT – no additives, just hemp (1 tbsp per serving).
  • Greens powder, we use a greens combination (with spirulina, sprouted barley, kamut, etc) that can be purchased in your health food store.
  • The frozen fruit changes each morning (mango, raspberry, strawberries, blue berries).
  • Agave or maple syrup are optional, as it might be sweet enough with the banana and frozen fruit. Simple and satisfying.
