Coconut Apricot Bliss Balls

With just the right amount of spice and sweetness, these bliss balls are a home run snack at Mountain Trek. They are easily prepared over the weekend to last you the entire week ahead.

INGREDIENTS

  • 1 1/2 c. toasted slivered almonds
  • 1/2 cup almond butter
  • 1/4 cup hemp seed butter
  • 2 cup chopped dried apricots
  • 1/4 cup dried cranberries
  • 3/4 cup coconut
  • 3/4 tsp powdered ginger
  • 1/4 tsp cardamom
  • 1 pinch sea salt
  • Zest from 1 1/2 oranges
  • Orange juice, to moisten
  • Pinch of salt

PREPARATION

  1. Using a food processor, chop nuts, and apricots finely.
  2. Add the nut butters and remaining ingredients.
  3. Form into balls with a small scoop
  4. Refrigerate or freeze.
  5. Enjoy!
